Raspberry Almond Thumbprints

    Raspberry Almond Thumbprints by DIZ3

    I finally made these! I've been wanting to try them for years! I decided that these were going to be Santa's cookies so I made them on Christmas Eve. I have to say they were a little too good to be left out for Santa, but since it was Christmas time I was obliged to share! Lol ;) ;)
    I surprised myself by getting exactly 3 dozen cookies, all I did was pinch some dough from the mixing bowl and rolled (since my cookie scoop is a little too big, it's a 1-1/2 Tablespoon scoop). I added the indent for the jam and chilled the dough balls in the fridge while I got the second dozen ready, then put the first batch in the oven and repeated with the third dozen. So they only chilled for a few minutes before baking but I think that helped with them holding their shape.
    I used 3 different style/weighted cookie sheets, they took exactly what Diz said, 16-18 minutes in the oven. I was very heavy handed with the glaze, and most "globbed" off the fork and covered the beautiful jam so I picked the few cookies that looked decent for the photo, Lol..;) But it didn't matter to us since we loved the almond glaze!
    These are soooo delicious, everyone loved them and devoured them! I had to hide some before my son came back around for another plate full! Lol...they are already asking me to make another batch. These are going to be the new favorite holiday cookie!

    Thanks Joce, they are yummy! A little more time consuming than my Gran's thumbprint recipe, but worth it! :D
    Unfortunately I did not receive a tri-pod for Christmas, sigh, so I will have to treat myself soon! ;)

    Yes, sometimes it is better to pick out exactly what you want, rather than have someone guessing which one you want. Lol, I think I like picking out things I like and want for myself most of the time.

They also freeze well. I let the glaze dry and then place them in an airtight container with wax paper between the layers. Do you find different cookie sheets bake differently? I have some heavy commercial grade baking sheets and the bake time is so different from the cheap store bought cookie sheets. Honestly, I like the cheaper pans better. I think they work better for an old run of the mill household appliance.

    Thanks Michelle! You should definitely give them a try, they are delicious! And such a pretty cookie for a bake sale, hostess gift or cookie exchange...but you might not want to share, lol! ;)

    Thanks Diz! And thanks for posting these delicious cookies! They do go fast, in fact I made another batch last night and half of it was devoured, mostly by my 18yr old son. ;)
    I have one heavy commercial grade pan, I usually use it for roasting vegetables in, and it's perfect for that. With that pan, the cookies baked quicker, 16 minutes, and they were darker brown on the bottoms. My cheaper, lighter Wilton cookie sheet took 18 minutes with light golden bottoms. My third sheet, and most favorite, is my mom's old cookie sheet that she got as a wedding present in the early 70's (part of a set but I have the last remaining piece!). It's a dark coated pan, probably more steel in it than aluminum (it doesn't buckle at high temp's), part of the coating is peeling off so I have to cover it but it's makes the best cookies. It's a similar enough bake to the Wilton pan though, I keep telling myself to get another Wilton cookie sheet! Another thing I should treat myself to soon! ;)

    Cosmicmother--My mom used dark colored pans back in the 60s and 70s. I loved them! I don't know what ever happened to them. My Wilton cookie sheets are well used so I bought a new one last month. They have really cheapened the quality! The pan is so thin that my finger tip has left several indentions in it. I'm going to use it today for the first time. Wish me luck!

    I might have the same pan! It's Wilton's Bakers Choice, non-stick pan. It has dents in it too, and some of the indents have rust marks on them so I make sure to dry it very well after washing. It also buckles if you bake at or higher than 375F. Even though it says non-stick I always use parchment on it. Good-luck with it!!
