    ~Made for March 2020's "Spring" Recipe Challenge~

    Risotto by Anchovy, et al.

    There are a few recipes that really say Spring to me, and Risotto with spring vegetables is at the top of the list!
    I had some leeks, zucchini and peas and did various ingredient searches and found a handful of recipes; but they either used just leeks and peas, or just zucchini and peas and so on...Then yesterday I did one last search and looked at just risotto recipes and this lonely little one on the last page had everything I was looking for! Even down to the vegetable broth I had in the pantry. Perfect!
    And it certainly did not disappoint, it's absolutely delicious! I also liked that it made a large batch, perfect for my big eaters! But if you are cooking for less than 4 people you may want to half it, especially if serving it as a side dish.
    The only thing I didn't have was the wine and parsley. I used my usual sub for wine (lemon juice, water and pinch of sugar), and for the parsley I chopped up some green onions. As I followed the directions I realized they didn't mention the peas, I think where it says "add zucchini and parsley" they meant peas instead of parsley--as parsley would normally be added at the end of cooking. So I added the peas there. However I did have to cook it a little longer after that point so the peas and zucchini got a little over cooked! But it was still delicious!
    Creamy, comforting, complex and perfectly cheesy..all the good C's! ;) The whole family loved it and went back for seconds. A winner risotto recipe!
    This was very hard to photograph, I tried it in the pan, a serving bowl, and my dinner plate. But it didn't look right. So I took this photo of leftovers in a bowl--which was the best I could get....but believe me, it tastes better than it looks! ;)

    I'm glad I finally did stumble across this recipe because it's one of the best ones I've made! I think subbing different veg would be great too, like mushrooms, asparagus, carrots, spinach etc. :)

    Thanks Linda! The risotto took the same amount of time to cook then the pork chops did in the oven, so it's a perfect dish if you have pork, chicken etc. that takes 20-30 minutes to cook. And if you have someone around that can stir on occasion then take advantage of the help! ;) :)
