Roasted Beet And Carrot Soup

    *Made for the November 2018 Root Vegetable Recipe Challenge*

    This is delicious! I didn't end up blending mine until completely smooth, as you can see from my picture, mainly because my husband was sleeping from working the night before and didn't want to run the blender too long lol. It's not too appetizing looking, but it wasn't as chunky as it looked. The spices in this are perfect! I used fresh nutmeg and threw a few cloves of garlic on the roasting pan. I halved the recipe but ended up using all of the broth. It did come out a beautiful color in my opinion :) :) Would be great with something dipped in it, maybe a flat bread or naan bread? Very yummy!!!

    I wish I liked beets. I do love carrot soups though, and the spices and flavours sound so good in this! Great recipe find! :)

    Thanks everyone!! The soup took on both the beet and carrot flavor very well Joce! Slight celery flavor as well :) I think this would be a great starter course to a nice meal, it's gorgeous!
