Roasted Spring Chicken and Vegetables

    ~Made for March 2020's "Spring" Recipe Challenge~

    Roasted Spring Chicken Vegetables by DetroitTokyo

    I learned two things from this recipe: 1) I love roasted green onions! 2) I do not care for roasted radishes! I love them raw though and hoped to also like them roasted--but the texture change wasn't doing it for me. Roasting does take away the sharp bite to the radish though.
    I weighed everything for the recipe but couldn't fit all the chicken with the veg so I roasted it separately. I used leg quarters, 3 were super tiny and the rest med-large. After I trimmed the extra skin and fat away they weighed a total of 3.6lbs. The recipe calls for 3.5lbs. I didn't have the full 1/2 pound of baby carrots so I threw in half a chopped red onion for good measure. ;)
    The veggies didn't seem to have much flavor and I'm sure if I roasted the chicken on the pan it would have been much better, so my bad. The chicken was excellent, so juicy and full of flavour. I was surprised by how good it was with just salt, pepper, dill and lemon juice!
    Next time I would love to roast garlic with it and perhaps add another herb to the pan, a hardy one that could roast along side like rosemary or thyme. I could also see using different veg in lieu of the radish, like green beans, asparagus, bell peppers or zucchini. Overall, an excellent recipe! :)

    Roasted green onions are the best Shona, grilled is pretty awesome too :). Roasted radishes are definitely a hate/like thing. I've had them once before and liked them. What a beautiful dinner, bookmarking!!!

    Nice photo! I agree with you regarding the roasted radish, love them raw and even love radish sprouts but not cooked. The rest of the recipe looks delicious and healthy!

    The radishes were the only thing on the pan that didn't get cooked through and through, perhaps I should have chopped them in quarters since they were rather large ones? But I'm not sure I want to try them again anyways, lol...
    I'll have to try grilled green onions soon Michelle! I loved how the green parts were crisp, like eating a veggie chip, surprisingly yummy!!
