Soft And Chewy Paleo Ginger Snap Cookies

    Holy cow! I was SO surprised by these!! Now, Paleo dessert recipes are not usually as good as regular, mainly because the texture is off some from the flours. These were texturally so chewy and soft (just like the title lol) and taste amazing!! My family is not usually a fan of my Paleo desserts, but they really liked these! I actually ended up making them their own cookies so they would stop eating mine :P Oh, forgot to say, I used a heaping 1 tsp. of ground ginger instead of a Tbs...seemed like too much, and didn't want to take my chances lol.

    That looks yummy Michelle! The spices in there sound just like a Pfeffernüsse Cookie! (I made some Pfeffernüsse but waiting for them to age a couple days before eating) Lol at the Kids almost eating them all! 1Tbsp of ground ginger does sound like alot, 1 tsp sounds better. :)
