Tasty Pea and Ham Risotto

    Tasty Pea And Ham Risotto by DonSpain

    This one uses all 3 P's, pork, peas and peppers. Ham for the pork, green peas and red pepper. Though rather then mixing the ham into the risotto I served it on the side for our Easter dinner.
    Disclaimer: I apologize now to all Italian's and risotto purists out there, I did not use Arborio rice! I know I know, but this was a last minute recipe idea. I usually make scalloped potatoes with ham, but I didn't have time to slice the potatoes and bake it for 50-60minutes. I thought about a rice pilaf but came across this and it looked perfect! I cooked it on the stove-top in the same amount of time the ham needed to re-heat in the oven.
    For the wine I used some white wine vinegar that I topped up with water and a pinch of sugar. And garnished with a few green onions instead of parsley.
    This risotto is absolutely delicious! We ended up slicing our ham and mixing it into the risotto on our plates; so next time I will make it that way, as per directions. All the flavours were perfect in this and I look forward to making it again!

    Your risotto looks perfect Shona! Your rice secret is safe with me :P With how creamy your picture is, it's hard to even tell that you didn't use Arborio! Nice and colorful as well :)

    I used long grain rice as I always have that in my pantry. I wasn't sure it would have enough starch to make it creamy, but surprisingly it worked out great! :)

    Great picture Shona! and great idea to just make the risotto and serve the ham on the side. Sounds like a nice change of pace from the usual potatoes of some sort. I've eaten risotto but have never made it.
