Warm Penne Pasta Salad

    Delicious pasta dish. Very easy and great for a quick dinner or lunch.
    I had to make a couple of changes ( dairy issues)
    I used Natrel lactose free butter and creamed Goat cheese in place of the Ricotta.
    Gave it a nice kind of a sharp taste which I found very good.

    I did not use the thyme as I thought I had some but did not. It was still very good
    without it.
    The submitter said you could serve this with chicken or fish.
    Since I find pasta filling I added shrimp to the dish, rather then use it as a side.

    I like your goat cheese substitute, and serving it with shrimp for a complete meal. I could see leftover ham, chicken or Italian sausage working nicely as well! Great recipe find! :D
