  I found this fabulous collection of simmer sauces from a company called Lizbeth Lane Cuisine. They have sauces you simply add to sauteed chicken cutlets, pork, shrimp, whatever. Fantastic! Tastes like a fine restaurant had made the entree....but I did!
  Piccata, Marsala, a somewhat spicy tomato and their roasted red pepper with basil cream sauce is to die for. I believe their web address is their name. Too tired to cook or just not in the mood to make something from scratch? --this is the ticket.
