Tandoori - style Shrimp recipe

    10 - 12 jumbo shrimp
    8 tbsp sweet butter
    1 tsp finely chopped fresh ginger root
    1 tsp crushed garlic
    1/2 tsp salt
    1 tsp coriander
    1 tsp ground cumin
    fresh cilantro leaves, finely chopped
    a few drops of red coloring

    To garnish:
    8 lettuce leaves
    1 - 2 fresh green chilies finely chopped
    1 lemon, ct into wedges

    - Carefully remove the shells from the shrimp

    - Transfer the shelled shrimp to a heatproof dish
    Melt the butter in a large saucepan

    - Add the ginger, garlic, chili powder, ground coriander, ground cummin, fresh cilantro leaves and red food coloring to the butter and mix together until thoroughly combined

    - Brush the melted butter and spice mixture over the shrimp.

    - Cook the shrimp under a preheated broiler for 10 -12 minutes, turning once

    - Serve the shrimp on a bed of lettuce and garnish with finely chopped fresh green chilies and lemon wedges
