Some more lime tips

    Limes should be firm to the touch, and dark green with a glossy shine. Coarse skinned and large limes tend to be thick skinned, which means you'll get less juice from them. Heavier fruits with fine-grained skin are juiciest. Avoid hard, shriveled limes - spongy, soft limes, or those with blemishes.

    Limes should always be refrigerated immediately.
