Ketchup - it's not just for pot roast!

    When a recipe calls for, say, 2 tablespoons of tomato paste, I use ketchup instead. I just can't wrap my head around the idea of opening even a small can of tomato paste then having to cover it and put it in the refrigerator only to forget about it. So, ketchup comes to my rescue on a routine basis! BTW, I use the organic kind.

    If you are out of ketchup, but have the canned tomato paste called for in your recipe (which often only requires a couple of tablespoons), then line a small metal tray with wax or cling wrap, and spoon the leftover paste into two Tablespoon mounds and freeze. Once frozen pop off the tray and into a freezer bag. Pull out and incorporate into your simmering whatever as needed. No more mystery cans in the 'fridge.
