Cooking once...eating two times

    I like cooking enough to put in freezer for another meal.Or I cook enough to recreate within the week.I will bake chicken breast...bar b q or sauces on half of it.Then 2 days later I use the other half either in salad,quick chicken pie(thicken chicken broth, frozen mixed vegs.,cooked chicken,either leftover homemade or instant mashed or potatoes for a top crust )or in ramen noodles or chicken salad .

I'm very lucky to be blessed with a family that doesn't mind left-overs, but then again...their alternative choice is either frozen pizza or going out to eat. I "groomed" my family from the beginning. If someone dares to complain about the meal I've prepared for them, then they get to cook the next dinner for the family. Nobody Ever complains, well...at least not where I can hear it.
    A quick silly....Last night I made Chicken and Dumplings. My son pulled a small bone from his mouth and said...that's Ok, Mom...it adds texture.

    I have found if you only cooked more of the main parts( Like the chicken before you add a sauceand put it aside then you have to create something out of it.Instead of having too much of a whole recipe to use as leftovers(like bar b q chicken or chicken soup).Always have freezer dish on hand , but let food cool before putting away.IF you had took some of the chicken and stock out before adding the dumplings and seasons you could had made stuffing,chicken with gravy over rice or potatoes.or chicken pot pie,ect..And I agreed if you dont like it then at least help next time or cook yourself.
