Double Chocolate Brownies

    Ingredients:
    300g of 70% dark chocolate
    125g of unsalted butter, at room temperature
    200g light soft brown sugar
    75ml olive oil
    3 medium eggs
    1 tsp vanilla extract
    75g plain flour
    25g cocoa powder
    1/2 tsp baking powder
    175g white chocolate, chopped

    Method:
    1. Preheat the oven to 180 degrees Celsius and grease the baking tin
    2. Place 200g of the dark chocolate and the butter in a heatproof bowl, set it over a saucepan of simmering water, and stir occasionally until melted
    3. Place butter and chocolate mixture, sugar, olive oil, eggs and vanilla extract in a large bowl and mix until combined. Sift over the flour, cocoa powder, and baking powder, and fold in gently with metal spoon. Then fold in the white chocolate and the remaining dark chocolate.
    4. Transfer the mixture to the prepared tin and bake for 25-30 minutes, or until set on top and a skewer inserted into the centre comes out with some moist crumbs attached. Remove from the oven and leave to cool completely in the tin, then remove from the tin and cut into 16 pieces.

    Brownies will keep for up to 5 days in an airtight container
