Seared Tuna Tataki With Shaved Cucumber

Beautiful, fresh ahi tuna at the market yesterday so could not resist! To make tataki you really need your tuna to be sushi-grade. I must warn you though: if you are lucky enough to have easy access to it, there is a danger of it becoming habit-forming!

Avocado Chimichurri Bruschetta

A fusion of world cuisines. Cubes of avocado are folded into chimichurri, an Argentinean sauce made of chopped parsley, cilantro, garlic, vinegar, and oil, to create a Latin variation on bruschetta, a classic Italian starter. From the Vegetarian Times.

Chicken Chimichangas With Jalapeno Havarti And Chipotle Guacamole

This is what I did with the other half of the chicken I used for my Spring Chicken pot pie. I really LOVE chimichangas plus they can be prepped in advance (even frozen)and heated and fryed later.

Raw Fish And Salad On Rice Bowl Hwe Dup Bab

Hwe dup bap is one of my favorite dishes ever. I liket to have this dish with Miso soup. You can use a variety of fish (salmon, tuna...)in there but the tilapia fillet is easy to get from local market and the price is OK too. The fish should be sashimi grade and very fresh. You can pick up prepacked fish at Korean or Japanese markets. For the vegetables I sliced up some green leaf lettuce, Persian cucumber, carrot, red onion and perilla. I like no rice, but tons of vegetables in mine.

Rib-eye Steaks With Chimichurri And Roasted Sweet Potatoes

I made this for dinner last night for a birthday. Chimichurri, a kind of spicy, vinegar-laced pesto, is the condiment of choice with the asado or grilled beef of Argentina.
