Creamy Zucchini Recipe

Ingredients
  • 1 (14.5 oz) can sliced tomatoes
  • 1/2 red onion, sliced
  • salt & pepper to taste
  • 1 (15.25 oz) can whole kernel corn, drained
  • 1 tbsp vegetable oil
  • 1 tbsp crushed garlic
  • 1 lb zucchini, sliced
  • 1/2 c heavy cream

Directions
  • Step #1 Heat oil in a large saucepan over med-heat/flame.
  • Step #2 Stir in red onion, & cook about 5 mins, salt & pepper, until onion is tender.
  • Step #3 Stir in zucchini, & cook 3 to 5 mins.
  • Step #4 Mix in garlic & tomatoes.
  • Step #5 Continue cooking, stirring every once in awhile, until the mixture comes to a boil.
  • Step #6 Stir corn & cream into the mixture.
  • Step #7 Reduce heat to low, stirring every once in awhile until thick & bubbly, & continue cooking, 15 to 20 mins.
