Sole With Lemon Souffle Topping Recipe

Ingredients
  • 1/4 c fresh parsley, sliced .
  • 1 tsp sugar .
  • 2 egg yolks .
  • 2 tbsps melted garlic butter or olive oil .
  • 1/2 c mayonnaise or sour cream .
  • 2 egg whites .
  • 2 tsps grated lemon rind .
  • 6 sole fillets .
  • 1/2 c flour .
  • 1 tsp seasoning salt

Directions
  • Step #1 1.
  • Step #2 Pre-heat oven to 425°F (220°C).
  • Step #3 2.
  • Step #4 Spice up the fish with the seasoned salt & sugar, & dip in flour.
  • Step #5 Brush with garlic butter or oil on both sides.
  • Step #6 3.
  • Step #7 Place individually on ovenproof plates or in a baking dish.
  • Step #8 Place the fish in the oven & bake for 5 mins.
  • Step #9 4.
  • Step #10 Mix the mayonnaise, lemon rind, egg yolks, & parsley.
  • Step #11 Beat the egg whites to the soft-peak stage.
  • Step #12 Fold whites into the sauce.
  • Step #13 5.
  • Step #14 Open the oven door & spoon the sauce over each fish.
  • Step #15 Bake for 10 to 15 mins until puffed & golden brown.
