Chicken-barley Soup Recipe

Ingredients
  • 1 tbsp minced garlic .
  • 3 carrots, peeled & finely sliced .
  • 2 lbs chicken breasts, cooked & cut into bite-sized pieces .
  • 1 c water .
  • 1/2 c barley, picked over & rinsed .
  • 1/2 tsp kosher salt .
  • 2 tbsps butter .
  • 4 celery ribs, finely sliced .
  • 1/4 tsp Tabasco sauce (about 2 shakes) .
  • 2 chicken bouillon cubes .
  • 3 (14 1/2 oz) cans chicken broth .
  • 1 tsp black pepper .
  • 1 medium onion, finely sliced .
  • 1/4 c fresh parsley, finely sliced

Directions
  • Step #1 Place the vegetables, garlic, salt, & pepper in the slow cooker (aka crockpot) crock.
  • Step #2 Top with the chicken pieces, butter, barley, broth, water, & bouillon.
  • Step #3 Do NOT stir.
  • Step #4 Cover up & cook on LOW for 8 hrs.
  • Step #5 Before serving, stir in the parsley & Tabasco sauce.
