grated parmesan cheese (optional) or romano cheese (optional) .
1/3 c romano cheese or parmesan cheese .
pepper .
2 tsps garlic powder (to taste) .
1 onion, finely sliced, divided .
2 tsps paprika .
1/2 c feta cheese, crumbled .
2 c frozen hash browns, thawed .
2 eggs .
1-2 tbsp dried parsley flakes (or to taste) .
1/2 c half-and-half cream or milk .
1-2 c cheddar cheese, grated (use old cheddar for this) .
1/2-3/4 c spinach (frozen, thawed & hand squeezed to drain any excess moisture, you can use half a box or use the who) .
seasoning salt (can use white salt)
Directions
Step #1 Grease a 9 or 10-inch deep-dish pie plate.
Step #2 In a bowl mix hash browns with about 1/4 c finely sliced onions.
Step #3 Press into the prepared pie plate to form a crust.
Step #4 Sprinkle top crust with a little seasoning salt or white salt & pepper, Romano or Parmesan cheese & garlic powder.
Step #5 Then sprinkle with the spinach, & then the feta cheese on top of the spinach.
Step #6 Top evenly with grated cheddar cheese.
Step #7 In a bowl whisk together eggs with half & half cream (or milk if using) & pour the egg mixture around the edge of the pie, (the egg mixture is only to sit around the edges that is why you start pouring around edges firstly).
Step #8 Sprinkle top the remaining sliced onion on top of the cheddar cheese in the center of the pie.
Step #9 Sprinkle top the dried parsley in a rind around the onions, the sprinkle the paprika around the parsley to make an outside ring.
Step #10 Refrigerate pie for 5-24 hrs.
Step #11 When ready to bake set oven to 325F degrees.
Step #12 Bake for about 50-60 mins, or until lightly browned.
Step #13 Cool & cut into 6 slices.
Step #14 Sprinkle top the slices with grated Parmesan or Romano cheese when serving if desired.
