Cinnamon Picnic Cake Recipe

Ingredients
  • 1/4 tsp salt .
  • 2 large eggs .
  • 1 1/4 c sugar .
  • 1 tsp vanilla .
  • 125 g butter .
  • 1 c sour cream .
  • 1/2 c mixed nuts (sliced) .
  • 2 tsps cinnamon .
  • 1/2 tsp baking soda .
  • 1 tbsp lemon juice .
  • 2 c flour .
  • 1/2 tsp baking powder

Directions
  • Step #1 Preheat oven to 180°C (350°F).
  • Step #2 Mix 1/4 c sugar with the nuts & cinnamon & set aside.
  • Step #3 Cream the butter with the remaining sugar until light & fluffy.
  • Step #4 Add the eggs, vanilla & lemon juice.
  • Step #5 Beat well.
  • Step #6 Sift the flour, baking powder, baking soda & salt in a bowl.
  • Step #7 Add 1/4 of the flour mix & 1/4 of the sour cream to the butter mix, beating lightly.
  • Step #8 Continue adding in 1/4's until all ingredients are mixd.
  • Step #9 Grease a 23cm square cake tin & line with paper.
  • Step #10 Pour batter into pan, sprinkle with the reserved cinnamon mixture.
  • Step #11 Bake for 35-40 mins or until a skewer inserted in the centre comes out clean.
  • Step #12 Let sit in pan for 10-15 mins before turning out onto a cooling rack.
