2 chicken breasts, cut into strips (12 - 16 oz total) .
2-3 mint leaves .
1 tbsp galangal (or ginger) .
1-2 tbsp slivered almonds .
Main .
40 g onions, slices (cut into fourths)
Directions
Step #1 Put Curry powder,saffron, galic,mint, galangal, sambal oelek,anise,almonds & Coconut milk into a food processor/blender & mix together until it makes a nice textured liquid.
Step #2 In a bake pan (might want to oil it lightly so it cleans up easier when you're done)place roughly 1/3 of the onion then pour enough sauce to cover the bottom of the pan.
Step #3 Now add the chicken, topping it with the remaining onion slices.
Step #4 Pour the remaining sauce over top.
Step #5 Leave to marinate for 20 - 45 mins.
Step #6 Cook uncovered at 400F degrees for about 45 mins.
