Chocolate-mint Drops Recipe

Ingredients
  • 2 1/2 c semi-sweet chocolate chips, halved (1 1/4 c batches) .
  • 1/2 c peppermint candies, sliced or candy canes, crushed .
  • 2 eggs .
  • 1/2 tsp baking powder .
  • 1/2 tsp peppermint extract .
  • 6 tbsps flour .
  • 2 tbsps dark corn syrup .
  • 3/4 c sugar

Directions
  • Step #1 Heat oven to 350°F Line two large baking sheets with parchment paper.
  • Step #2 Melt half of the chocolate chips; set aside.
  • Step #3 Mix flour & baking powder together.
  • Step #4 In medium bowl, corn syrup, beat sugar, with electric mixer on medium, & extract until thick, eggs, about 3 mins.
  • Step #5 Gradually beat in melted chocolate, then dry ingredients.
  • Step #6 Mix in remaining morsels; freeze dough for 10 mins.
  • Step #7 Drop heaping tbspfuls of batter, 3" apart, on ungreased baking sheets (cookies will spread).
  • Step #8 Refrigerate remaining dough.
  • Step #9 Bake cookies 12 mins.
  • Step #10 Quickly sprinkle tops with sliced candies; bake 3 to 5 mins more, until cookies are softly set.
  • Step #11 Cool cookies on baking sheets 5 mins.
  • Step #12 Transfer to wire racks & cool.
