Chicken And Corn Medley Recipe

Ingredients

3/4 tsp dried oregano
2 c fresh or frozen corn
1 tbsp Dijon mustard
2 tbsps lemon juice
1 1/2 c sliced onion
2 tbsps cooking oil
Hot cooked noodles or rice (optional)
1/2 c sliced fresh parsley
2 tbsps minced fresh basil
3/4 tsp pepper, divided
2 c sliced fresh mushrooms
3 garlic cloves, minced
2 tsps salt, divided
4 boneless, skinless chicken breast halves, thinly sliced
3/4 c all-purpose flour
2 c seeded, sliced tomato
2 c chicken broth
1/8 tsp cayenne pepper
1 medium green pepper, julienned

Directions

Step #1 In a large bowl, mix flour, 1 tsp salt & 1/2 tsp pepper.
Step #2 Add chicken & toss to coat.
Step #3 In a large skillet, heat oil over med-heat/flame.
Step #4 Saute chicken until browned; remove & set aside.
Step #5 In the drippings, saute onion until tender.
Step #6 Toss mushrooms with lemon juice.
Step #7 Add mushrooms & garlic to the skillet; cook & stir for 4 mins or until tender.
Step #8 Add the broth, mustard, remaining salt & pepper, basil, oregano, cayenne pepper & chicken.
Step #9 Simmer, uncovered, for 15 mins.
Step #10 Stir in the corn, tomatoes & green pepper; simmer for 10 mins.
Step #11 Sprinkle top with parsley.
Step #12 Serve over noodles or rice if desired.
