Chicken And Corn Medley Recipe

Ingredients
  • 3/4 tsp dried oregano
  • 2 c fresh or frozen corn
  • 1 tbsp Dijon mustard
  • 2 tbsps lemon juice
  • 1 1/2 c sliced onion
  • 2 tbsps cooking oil
  • Hot cooked noodles or rice (optional)
  • 1/2 c sliced fresh parsley
  • 2 tbsps minced fresh basil
  • 3/4 tsp pepper, divided
  • 2 c sliced fresh mushrooms
  • 3 garlic cloves, minced
  • 2 tsps salt, divided
  • 4 boneless, skinless chicken breast halves, thinly sliced
  • 3/4 c all-purpose flour
  • 2 c seeded, sliced tomato
  • 2 c chicken broth
  • 1/8 tsp cayenne pepper
  • 1 medium green pepper, julienned

Directions
  • Step #1 In a large bowl, mix flour, 1 tsp salt & 1/2 tsp pepper.
  • Step #2 Add chicken & toss to coat.
  • Step #3 In a large skillet, heat oil over med-heat/flame.
  • Step #4 Saute chicken until browned; remove & set aside.
  • Step #5 In the drippings, saute onion until tender.
  • Step #6 Toss mushrooms with lemon juice.
  • Step #7 Add mushrooms & garlic to the skillet; cook & stir for 4 mins or until tender.
  • Step #8 Add the broth, mustard, remaining salt & pepper, basil, oregano, cayenne pepper & chicken.
  • Step #9 Simmer, uncovered, for 15 mins.
  • Step #10 Stir in the corn, tomatoes & green pepper; simmer for 10 mins.
  • Step #11 Sprinkle top with parsley.
  • Step #12 Serve over noodles or rice if desired.
