Chili Loaf Recipe

Ingredients
  • 1 (1 lb) round or oval French bread .
  • 1/2 c 2% low-fat cheddar cheese, shredded .
  • 1 c neufchatel cheese .
  • 2 large eggs .
  • 1 (1/2 lb) firm-ripe avocados .
  • 1 (7 oz) can sliced green chilies .
  • 1/4 tsp salt .
  • 3/4 c nonfat milk .
  • 1/4 c flour .
  • green tomatillo sauce .
  • 1 tbsp butter, melted .
  • 1 tbsp lime juice .
  • 1/2 tsp ground mild california chili powder or paprika

Directions
  • Step #1 Cut the top off the loaf leaving an edge 3/4-1 inch from crust rim.
  • Step #2 Pull out the center of the loaf.
  • Step #3 Tear the center bread into 1/2 inch bread chunks.
  • Step #4 Brush the interior of the loaf with enough butter to coat.
  • Step #5 Wrap the crust with foil wrap.
  • Step #6 Bake at 350 until interior is lightly toasted, 7-9 mins.
  • Step #7 Blend neufchatel cheese, chili, eggs, 1/2 c milk, flour, & salt.
  • Step #8 Stir chilies into cheese mixture.
  • Step #9 Set hot crust on a baking sheet & pour filling into it.
  • Step #10 Add remaining 1/4 c milk, stir with a fork, then push enough 1/2 inch chunks of bread into the filling to bring it up to the crust rim.
  • Step #11 Return loaf to the oven.
  • Step #12 Bake until center is firmly set when loaf is carefully shaken, 40-45 mins.
  • Step #13 Remove from oven & as soon as possible sprinkle with cheddar cheese.
  • Step #14 Let cool at least 15 mins.
  • Step #15 Remove foil wrap.
  • Step #16 Peel & thenly slice or dice avocado, mix with lime juice, & arrange on the chili loaf.
  • Step #17 Cut loaf & serve this with tomatillo sauce & salt to taste.
