Lamb, Bell Pepper And Feta Stew Recipe

Ingredients
  • 1 c feta cheese, crumbled .
  • 1 red bell pepper, cut into 1/2-inch strips .
  • 1 green bell pepper, cut into 1/2-inch strips .
  • 1 1/2 c beef broth .
  • 2 garlic cloves, sliced .
  • 2 tbsps tomato paste .
  • 1 white onion, sliced .
  • 1 c garbanzo beans, drained .
  • 2 c crushed tomatoes in puree .
  • 3 tbsps olive oil .
  • 2 lbs lamb stew meat, cut into 1-inch pieces

Directions
  • Step #1 In a large pot heat oil.
  • Step #2 Add lamb & add salt & pepper.
  • Step #3 Brown meat on all sides.
  • Step #4 Remove & set aside.
  • Step #5 In pot, over med-heat/flame, add garlic & onion.
  • Step #6 Sautee about 5 mins.
  • Step #7 In pot with onion mixture add meat, tomatoes, broth & tomato paste.
  • Step #8 Stir well.
  • Step #9 Bring to boil.
  • Step #10 Reduce heat to low & cover.
  • Step #11 Simmer for 1 hr 15mins.
  • Step #12 Stir every 20mins or so.
  • Step #13 Add bell peppers & garbanzo beans.
  • Step #14 Cover up & let simmer for 15mins.
  • Step #15 Serve in bowls topped with feta cheese.
