Reduced Fat Rice Muffins Recipe

Ingredients
  • 2 eggs .
  • 1/4 tsp vanilla extract .
  • 1 1/4 c whole wheat flour .
  • 2 tbsps brown sugar .
  • 2 tsps baking powder .
  • 1 c basmati rice, cooked .
  • 1/4 c applesauce .
  • 2/3 c skim milk

Directions
  • Step #1 Stir first three ingredients together, set mixture aside.
  • Step #2 Beat remaining ingredients, stirring rice in last.
  • Step #3 Combine two mixtures just until moistened.
  • Step #4 Spoon into 12 muffin c.
  • Step #5 Bake at 440° F for 20 mins.
