French Chicken Broccoli Casserole Recipe

Ingredients
  • 1/4 tsp salt .
  • 1/3 c chicken broth or white wine .
  • SAUCE .
  • 1 lb fresh broccoli, sliced in spears & steamed 2 mins or 3 (10 oz) packages frozen broccoli spears, thawed .
  • 1/4 c cornstarch, dissolved in 1/2 c water .
  • 1 (8 oz) package old English cheese, cubed or 8 oz shredded sharp cheddar cheese .
  • 1/3 c butter, melted .
  • 3-4 c cooked chicken, skinned, boned & cut into large pieces .
  • 2 c milk (I use half & half) .
  • 1/4 tsp pepper .
  • 1 (2 oz) jar sliced pimentos

Directions
  • Step #1 In a greased 13 x 9 baking dish, layer the broccoli spears & chicken pieces alternately.
  • Step #2 Set aside.
  • Step #3 In a saucepan over med-heat/flame, broth, mix the melted butter, dissolved cornstarch, seasonings, milk & pimientos.
  • Step #4 Cook until thickened.
  • Step #5 Add cheese, stir until melted.
  • Step #6 Pour warm sauce over top of chicken & broccoli.
  • Step #7 Bake at 350°F for about 35 mins or until bubbly.
