Broiled Bass With Ginger-scallion Oil & Stir-fried Asparagus Recipe

Ingredients
  • 1 pinch crushed red pepper flakes .
  • 1 tsp kosher salt .
  • 2 tbsps minced fresh ginger .
  • 1 large garlic clove, minced .
  • 2 tbsps fresh lemon juice .
  • 1 tsp sesame oil .
  • salt & freshly ground black pepper .
  • 1 tsp soy sauce .
  • 2 tbsps vegetable oil .
  • 1/2 tsp finely grated lemon zest .
  • 4 (5 oz) skinless striped bass fillets (about 1 inch thick) .
  • 1 lb thin asparagus, cut into 1/3-inch lengths .
  • 1/4 c vegetable oil .
  • Stir-Fried Asparagus .
  • 1 garlic clove, minced .
  • 4 scallions, thinly sliced

Directions
  • Step #1 In a bowl, ginger, mix the scallions, garlic & red pepper.
  • Step #2 In a saucepan, heat the oil until shimmering.
  • Step #3 Pour the hot oil over the scallion mixture & stir in the the lemon juice, soy sauce & salt.
  • Step #4 Preheat the broiler.
  • Step #5 Brush the fillets on both sides with some of the scallion oil.
  • Step #6 Arrange on a broiler pan skinned side down; broil until just cooked through, about 5 mins.
  • Step #7 Transfer the fillets to plates; spoon some scallion oil on top.
  • Step #8 Serve with the Stir-Fried Asparagus.
  • Step #9 Heat the oil In a large-ish skillet.
  • Step #10 Add the asparagus & stir-fry over moderately high heat until softened, about 5 mins.
  • Step #11 Add the garlic, sesame oil & lemon zest, season this with salt & pepper & stir-fry for 2 mins.
  • Step #12 Serve hot.
