Taditional Gazpacho Recipe

Ingredients
  • 1 lb tomatoes, roughly sliced (undrained) or 1 (14 oz) can tomatoes (undrained) .
  • 1 garlic clove, sliced (to taste) .
  • 1 medium cucumber, peeled & sliced .
  • 2 tbsps sherry wine vinegar or red wine vinegar .
  • salt & black pepper .
  • 2-3 slices bread (a day or two old) .
  • 1/4 c extra virgin olive oil, plus more for garnish

Directions
  • Step #1 Combine the tomatoes, oil, cucumber, vinegar, bread, & garlic with 1 c water in a mixer; process until smooth.
  • Step #2 If the gazpacho seems too thick, thin with extra water.
  • Step #3 Taste & add salt & black pepper as necessary.
  • Step #4 Serve as soon as possible (or put in the fridge & serve this within a couple of hrs.
  • Step #5 Drizzle with extra olive oil.
