Asian Style Mussels Recipe

Ingredients
  • 1 serrano pepper or Thai chile, minced with seeds .
  • 1/4 c freshly squeezed lime juice, plus wedges for garnish (about 2 limes) .
  • 1/2 c water .
  • 3 tbsps fresh cilantro leaves .
  • 4 garlic cloves, smashed .
  • 1 stalk fresh lemongrass, sliced & smashed .
  • 1 tbsp light brown sugar .
  • 3 tbsps fresh mint leaves .
  • 1 tbsp peanut oil .
  • 2 tbsps Southeast Asian fish sauce .
  • 3 medium shallots, thinly sliced .
  • 2 tbsps sliced peeled fresh ginger .
  • 48 large mussels, rinsed & beard removed (about 2 1/2 lbs)

Directions
  • Step #1 Heat the oil a large skillet, with a lid, over med-heat/flame.
  • Step #2 Add the shallots, lemongrass, ginger, & stir-fry until golden & aromatic, & chili, garlic, about 3 mins.
  • Step #3 Add the water, & sugar, fish sauce, stir & bring to a simmer.
  • Step #4 Add the mussels, cover & steam until they open & plump slightly, about 5 mins.
  • Step #5 Discard any mussels that do not open.
  • Step #6 Stir in the lime juice, cilantro, & mint leaves.
  • Step #7 Divide the mussels & broth evenly among the bowls.
  • Step #8 Serve.
