Quick Provencal Mushroom And White Bean Stew Recipe

Ingredients
  • 2 (13 oz) cans vegetable broth .
  • 1/4 c dry white wine .
  • 1 (14 1/2 oz) can sliced tomatoes .
  • 1 tbsp olive oil .
  • 1 tsp herbes de provence .
  • 1 tsp garlic, minced .
  • 1 c sliced onions .
  • 1 lb fresh white mushrooms (about 5 c, sliced) .
  • 2 (15 oz) cans cannellini beans, rinsed & drained

Directions
  • Step #1 Heat oil In a large-ish soup pot over medium-high heat.
  • Step #2 Add mushrooms, & herbe de Provence, & cook & stir until onion is very tender & mushrooms are slightly golden, garlic, onion, about 8 mins.
  • Step #3 Add vegetable broth, tomatoes (including liquid), & wine.
  • Step #4 Bring to a boil, & let simmer to mix flavors, cover, reduce heat, about 15 mins.
  • Step #5 In a small bowl, mash 1 c of the beans until smooth; add to stew.
  • Step #6 Stir in remaining beans & heat until hot, about 8 mins.
  • Step #7 Serve as soon as possible.
