Indian Carrot Bread Recipe

Ingredients
  • 1 tsp salt .
  • 2 tbsps butter .
  • 1 c cornmeal .
  • 2 tbsps honey .
  • 1 tsp baking powder .
  • 3/4 c milk .
  • 1 1/2 c whole wheat flour .
  • 2 c carrots, grated .
  • 1/2 tsp baking soda .
  • 2 tbsps brown sugar .
  • 3/4 c water

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 Butter an 8-inch square pan.
  • Step #3 Put carrots in water & bring to a boil over med-heat/flame; boil until tender.
  • Step #4 Remove from heat & add honey, brown sugar, cornmeal, butter, & milk.
  • Step #5 Sift together flour, baking soda, baking powder, & salt.
  • Step #6 Combine dry mixture with carrot mixture, & place this in pan.
  • Step #7 Bake until a cake tester insterted in middle comes out clean (50 mins).
  • Step #8 Serve hot with butter.
