Sandee's Portabella Frittata Recipe

Ingredients
  • 8 large eggs .
  • 2 tbsps olive oil .
  • 3/4 c ham, sliced (optional) .
  • 1/2 c water .
  • 1/2 large bell pepper, sliced .
  • 2 portabella mushroom caps, sliced into strips .
  • 1 tbsp butter .
  • 1/2 large onion, sliced (Vidalia is best) .
  • 3-4 potatoes, peeled, sliced, rinsed & drained .
  • rosemary

Directions
  • Step #1 Thoroughly rinse potatoes & microwave 4-5 mins.
  • Step #2 Drain.
  • Step #3 Sauté portabellas briefly in butter.
  • Step #4 Separately, sauté peppers & onion in olive oil.
  • Step #5 Add potatoes & rosemary (and ham), & heat through.
  • Step #6 Remove pan from heat.
  • Step #7 Beat eggs & water thoroughly, until eggs begin to turn a lemony color.
  • Step #8 Butter (or oil) a casserole dish, or individual ovenproof bowls.
  • Step #9 Add sautéed vegetable (and ham) mixture.
  • Step #10 Pour in the egg mixture.
  • Step #11 Top with sautéed portabellas.
  • Step #12 Bake approximately half an hr at 350 degrees.
  • Step #13 If you are making individual frittatas, they'll cook a little faster.
  • Step #14 Using a deep casserole dish will take a little longer.
  • Step #15 The dish is done when it puffs, & the middle doesn't move when slightly shaken.
  • Step #16 Serve as soon as possible.
