Step #1 Mix orange juice, maple syrup, mustard, garlic, sunflower oil & vinegar in a bowl.
Step #2 Marinade chicken for at least 4 hrs, but overnight is even better.
Step #3 For the pecans, & stir in the tabasco, melt the butter, pepper flakes & garlic.
Step #4 Stir in the pecans.
Step #5 Spread onto a flat baking sheet & bake on a really low temp - approx 120C for an hr.
Step #6 Be careful that the pecans don't burn though.
Step #7 After marinading, bring to the boil, remove the chicken & pour marinade into a small pan, stirring until the marinade reduces to a sticky glaze.
Step #8 The oil will stop the Maple syrup from burning.
Step #9 Grill or barbecue the chicken breasts, turning & brushing with the glaze regularly until the chicken is cooked but still juicy.
Step #10 Serve the chicken with the remaining glaze as a sauce, along with the peppered pecans & whatever else takes your fancy.
