Mediterranean Orzo Vegetable Pilaf Recipe

Ingredients
  • 3/4 c chickpeas (or garbanzo beans) .
  • 1/4 c kalamata olives, sliced .
  • 1 (14 oz) can vegetable broth .
  • 2 tbsps parmesan cheese .
  • 2 tbsps olive oil .
  • 1 tbsp capers .
  • 2 tbsps green onions, finely sliced .
  • 1/3 c white wine .
  • 1/4 c bell peppers, sliced (green or red) .
  • 1 c orzo pasta, uncooked

Directions
  • Step #1 In a 10 inches skillet over medium-high heat, then stir in the the uncooked orzo, heat the olive oil, & green onion.
  • Step #2 Cook, stirring frequently, until the orzo is lightly browned, about 3 mins.
  • Step #3 Stir in the broth & wine & heat until boiling, then reduce heat, cover & let simmer about 6 mins, stirring every once in awhile.
  • Step #4 Stir in the peppers, & cook covered another 6 mins, stirring every once in awhile, chickpeas, olives & capers, until most liquid is absorbed.
  • Step #5 Pour into a bowl & sprinkle with the 2 T of parmesan cheese.
