Sauteed Spinach And Fava Beans Recipe

Ingredients
  • roasted red peppers (optional) .
  • 2 tsps olive oil .
  • 10 oz prewashed ready-to-eat spinach .
  • bouquet garni (available in some markets or mix 3 sprigs parsley, 2 sprigs fresh rosemary, 1 sprig fresh thyme) .
  • 1/2 tsp salt .
  • 1 (15 oz) can fava beans, drained & rinsed .
  • 4 olives (optional) .
  • 1/8 tomato, wedge (optional) .
  • 4 garlic cloves, minced .
  • 1 pinch cayenne .
  • salt .
  • 1/8 lemon (optional) or lime wedge (optional)

Directions
  • Step #1 Place beans in medium pot.
  • Step #2 Add water to cover beans & bring to boil.
  • Step #3 Add bouquet garni & cover, leaving lid slightly ajar.
  • Step #4 Simmer 30 mins.
  • Step #5 Drain beans & discard bouquet garni.
  • Step #6 Meanwhile, in large skillet, heat the olive oil over med-heat/flame.
  • Step #7 Add garlic & cook, until it turns golden, stirring, about 5 mins (important - do not let garlic burn).
  • Step #8 Remove garlic with slotted spoon & set aside.
  • Step #9 Add cayenne & then stir in the spinach, cover & let cook about 1 min, until wilted.
  • Step #10 Spice up with salt.
  • Step #11 Mound spinach onto large serving plate, top this with beans & sprinkle with browned garlic.
  • Step #12 Add garnishes if desired.
