All-purpose Cream-style Soup Base Recipe

Ingredients
  • salt & pepper .
  • 3 (14 1/2 oz) cans chicken broth, 4 1/3 c .
  • 1 celery rib, sliced fine .
  • 1/3 c sour cream .
  • 1/4 tsp thyme .
  • 3/4 c unsalted butter .
  • 3 c milk .
  • 1/4 tsp garlic powder .
  • 3/4 c flour .
  • 1 c heavy cream .
  • 1 tbsp dried parsley .
  • 1 onion, sliced .
  • 1 carrot, sliced fine

Directions
  • Step #1 Saute over low heat/flame, herbs & spices, onions, carrot & celery til very, very soft in butter.
  • Step #2 Mash well or puree in mixer or food chopper/processor.
  • Step #3 Stir in flour, cook, stirring for 2-3 mins.
  • Step #4 Do not brown.
  • Step #5 In large pot, bring chicken broth & milk to a boil.
  • Step #6 Drop flour mixture in by spoonfulls, low-boil til thickened, stirring, stirring.
  • Step #7 *At this point, you can add whatever cooked ingredients your heart desires! Any cooked meats, rice, sea food, vegetables, etc.
  • Step #8 ! Stir in cream, salt & pepper to taste.
  • Step #9 Remove from heat, stir in the sour cream.
