Step #1 Mix the oatmeal, brown sugar & oil; set aside.
Step #2 Next, beat the reminder of the ingredients: eggs, vanilla & salt.
Step #3 Combine all ingredients into one large bowl (get those hands in there & squeeze, don't be afraid to get messy!) press down with a plate, so that the oatmeal can soak up the mixture, cover with saran wrap & leave in the refrigerator overnight.
Step #4 When ready to bake, spoon out a tbsp size portion onto a foil wraped cookie sheet.
Step #5 I personally don't grease the foil wrap or cookie sheet, once they cool I have no problem getting them off the sheet.
Step #6 Bake at 325-350° for 10-15 mins.
Step #7 Let cool about 10-15 min before removing cookies from foil wrap.
