Creamy Goat Cheese And Aspargus Farfalle Recipe

Ingredients
  • 3/4 lb asparagus spears, sliced into 1-inch pieces .
  • 6 tbsps goat cheese .
  • 1/2 c parmesan cheese, grated .
  • 3/4 lb farfalle pasta or bow tie pasta .
  • 1 tbsp lemon peel, grated .
  • 2 tbsps lemon juice .
  • 1/4 c olive oil .
  • 1/2 tsp crushed red pepper flakes .
  • salt .
  • 1 red onion, small & finely sliced .
  • 1 tbsp chives, snipped .
  • pepper

Directions
  • Step #1 In a pot of boiling water, blanch asparagus for 2 mins.
  • Step #2 Drain, rince with cold water & set aside.
  • Step #3 In another large pot, cook pasta as directed.
  • Step #4 Drain.
  • Step #5 Meanwhile, in a deep skillet, heat olive oil.
  • Step #6 Add onion & cook this until softened.
  • Step #7 Add asparagus & red pepper flakes to onion in pan & saute for 4 mins.
  • Step #8 Add pasta, lemon juice, & lemon peel to skillet & mix well.
  • Step #9 Add salt & pepper to taste.
  • Step #10 Add goat cheese & chives & toss to mix well.
  • Step #11 Remove & plate pasta & top this with parmsean.
