Cream Of Salmon Soup Recipe

Ingredients
  • 1 c whipping cream .
  • 4 c water .
  • 1 tsp salt .
  • 1 bay leaf .
  • minced dill weed (optional) .
  • 3 medium potatoes, peeled & sliced .
  • 2 lbs skinless salmon fillet, cut into 1-inch pieces .
  • 2 medium onions, sliced .
  • 1/4 tsp pepper

Directions
  • Step #1 Heat water, salt, onions, potatoes, pepper & bay leaf to boiling in Dutch oven; reduce heat.
  • Step #2 Cover up & let simmer until potatoes are almost tender, about 10 mins Stir in salmon.
  • Step #3 Cover up & let simmer until fish flakes easily with fork, about 5 mins longer.
  • Step #4 Remove bay leaf.
  • Step #5 Stir 1/2 c of the soup liquid into whipping cream.
  • Step #6 Gently stir cream mixture into the soup; heat through.
  • Step #7 Sprinkle top with dill weed.
  • Step #8 Note: Maybe using 15 oz canned salmon, deboned & skinned, could be a substitute if fresh salmon is unavailable to you or cost prohibitive.
