Cream Of Sweet Potato Soup Recipe

Ingredients
  • 3 (14 oz) cans low-sodium chicken broth
  • 1/4 c brown sugar, or more to taste
  • 1/4 tsp ground nutmeg
  • 1/3 c heavy cream
  • 3 large sweet potatoes
  • Black pepper to taste
  • 1/2 tsp salt (to taste)
  • Cayenne pepper to taste

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Bake sweet potatoes in preheated oven until soft, about 1 1/2 hrs (you can also use a microwave).
  • Step #3 Remove & let cool slightly.
  • Step #4 Peel sweet potatoes, & puree with chicken broth in batches, using enough chicken broth so that it purees smoothly.
  • Step #5 Bring puree to a simmer in a large saucepan over medium-high heat, then reduce heat to medium-low.
  • Step #6 Stir in the sugar, & cayenne pepper; cover, nutmeg, black pepper, salt, & let simmer for 10 mins.
  • Step #7 Remove from heat, & stir in the cream.
