Pecan Pie Bars Recipe

Ingredients
  • 3/4 c butter, cut up .
  • 2 1/2 c finely sliced pecans .
  • 1 tsp vanilla extract .
  • 1 c light corn syrup .
  • 1/2 c sugar .
  • 1/2 c butter .
  • 1/8 tsp salt .
  • 1 c firmly packed brown sugar .
  • 4 eggs, lightly beaten .
  • 2 c all-purpose flour

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Grease a 13" x 9" pan.
  • Step #3 Crust:.
  • Step #4 Combine flour, sugar & salt In a large-ish bowl.
  • Step #5 Cut in 3/4 butter thoroughly with a pastry mixer (or fork) until mixture resembles very fine crumbs.
  • Step #6 Press mixture evenly into a greased pan, using a piece of plastic wrap to press crumb mixture firmly in pan.
  • Step #7 Bake at 350 degrees for 17 to 20 mins or until lightly browned.
  • Step #8 Filling:.
  • Step #9 Combine brown sugar, corn syrup, & 1/2 c butter in a saucepan.
  • Step #10 Bring to a boil over med-heat/flame, stirring carefully.
  • Step #11 Remove from heat.
  • Step #12 Stir one-fourth of hot mixture into beaten eggs (to temper eggs); add to remaining hot mixture.
  • Step #13 Stir in pecans & vanilla.
  • Step #14 Pour filling over baked crust.
  • Step #15 Bake at 350 degrees for 30-35 mins or until set.
  • Step #16 Cool completely in pan on a wire rack.
  • Step #17 Cut into desired size bars.
