Peanut Butter Gingerbread Cookies Recipe

Ingredients
  • 1/2 tsp ground cinnamon .
  • 1 (10 oz) package peanut butter chips (1 2/3 c) .
  • 2 large eggs .
  • 1/4 tsp ground ginger .
  • 1 c butter, softened (2 sticks) .
  • 1/4 tsp salt .
  • 1 c dark corn syrup .
  • 1 c brown sugar, packed .
  • 5 c flour .
  • 1 tsp baking soda

Directions
  • Step #1 Microwave peanut butter chips on HIGH (100%) until chips are melted when stirred (1-2 mins).
  • Step #2 In a large bowl, beat melted peanut butter chips & butter together until well mixed.
  • Step #3 Add brown sugar, corn syrup, & eggs; beat until light & fluffy.
  • Step #4 In a seperate bowl, ginger, baking soda, whisk together flour, cinnamon, & salt.
  • Step #5 Add half of flour mixture to butter mixture; beat at lowish speed of electric mixer until smooth.
  • Step #6 With wooden spoon, stir in the remaining flour mixture until well mixed.
  • Step #7 Divide into thirds; wrap each in plastic wrap.
  • Step #8 Refrigerate until dough is firm enough to roll (at least 1 hr).
  • Step #9 Preheat oven to 325°F.
  • Step #10 On a lightly floured surface, roll 1 portion of dough at a time to 1/8" thickness; with floured cookie cutters, cut into holiday shapes.
  • Step #11 Place on ungreased cookie sheet.
  • Step #12 Bake until set & lightly browned (10-12 mins).
  • Step #13 Cool slightly; remove this from cookie sheet to wire rack.
  • Step #14 Cool completely.
  • Step #15 Frost & decorate as desired.
