Mild Black Beans And Rice Recipe

Ingredients
  • 1 medium onion, sliced .
  • 2 tsps salt .
  • 3 c water .
  • 2 garlic cloves, finely sliced .
  • 2 (15 oz) cans black beans, undrained .
  • 2 c long-grain rice .
  • 1/4 tsp ground cumin .
  • 2 tbsps olive oil .
  • pepper, to taste .
  • 1 (10 oz) can chicken broth, condensed .
  • 2 slices bacon, sliced to 1/4-inch

Directions
  • Step #1 In large saucepan, cook bacon in olive oil 6-8 mins over low heat/flame.
  • Step #2 Add onion & garlic & cook, stirring until tender, another 6-8 mins.
  • Step #3 Add remaining ingredients & cook over medium-high heat until the water has been absorbed, about 10 -15 mins.
  • Step #4 Stir with a fork, cover & cook over low heat/flame around 10-15 mins or until rice is tender.
