Ingredients
1 (11 oz) can mandarin oranges, drained .
2 eggs, seperated .
2 tsps reduced-calorie margarine, melted .
1/2 tsp maple flavoring .
2 tbsps sliced pecans .
1-2 lb butternut squash .
1/4 tsp cinnamon
Directions
Step #1 Cut sqaush in half lengthwise, & remove seeds.
Step #2 Place cut side down in a shallow dish; add hot water to depth of 1/2 inch in dish.
Step #3 Cover up & bake 375 for 35 mins, till tender.
Step #4 Let cool; carefully scoop out pulp.
Step #5 Mash pulp with potato masher.
Step #6 mix 2 c squash & next 4 ingredients, stir well.
Step #7 Beat in yolks till thick & lemon colored; stir in theto the squash mixture.
Step #8 Beat egg whites (at room temp) till stiff but not dry.
Step #9 Gently fold into squash mixture, Spoon mixture into 6 ungreased individual 6 oz souffle dishes.
Step #10 Bake 375 for 20 mins, till puffed & light brown.
Step #11 Garnish with pecans & serve.
