Leek Potato Soup Recipe

Ingredients
  • 2 tsps salt .
  • 8 c water .
  • 4 c peeled sliced potatoes .
  • 3 c sliced leeks

Directions
  • Step #1 Peel & slice potatoes.
  • Step #2 Carefully wash the leeks to get all the grit out, then cut up the white part & a little bit of the pale green part.
  • Step #3 Discard the dark green part, or use to make vegetable stock.
  • Step #4 Put all ingredients In a large-ish pot & boil for 30 to 45 mins or until tender.
  • Step #5 Mash vegetables with a fork or mix in a mixer, depending on the consistency you prefer.
  • Step #6 The soup is a little pale, so you may want to garnish with sliced parsley or chives.
  • Step #7 Clayton recommends adding 3 tbsps of unsalted butter, but I've never missed it.
  • Step #8 My grandmother also adds 2 tsps chicken bouillon, which gives it a good flavor.
