Pierogi And Vareniki Dough Recipe

Ingredients
  • 1/4 c water .
  • 2 large eggs .
  • 3/4 c cake flour (not self-rising) .
  • 1 c all-purpose flour, plus extra for kneading & rolling .
  • 3/4 tsp salt

Directions
  • Step #1 Stir together flours in a bowl.
  • Step #2 Make a well in flour & add eggs, salt, & water, then stir this together with a fork without touching flour.
  • Step #3 Continue stirring, slowly incorporating flour into well until a soft dough forms.
  • Step #4 Transfer dough to a lightly floured work surface & knead, until smooth & elastic, adding only as much extra flour as needed to keep dough from sticking, about 8 mins.
  • Step #5 (Dough will be soft.
  • Step #6 ) Cover up with plastic wrap & let rest at about room temp at least 30 mins.
