Ingredients
1 tbsp turmeric powder .
2 tbsps sugar or 3 tbsps brown sugar .
1 1/2 tsps ground cinnamon .
12 garlic cloves, sliced fine .
1/2 c cider vinegar or 1/4 c white vinegar .
3/4 tsp ground cloves .
2 inches ginger, sliced fine .
1 1/2 tbsps black mustard seeds, ground (found at Indian Grocery store) .
1 kg pork, with fat, cubed in 1 to 2 inch squares .
1 tbsp red chili pepper flakes, ground .
2 sprigs curry, patta (optional) .
salt .
1 tbsp ground cumin .
1 tbsp ground pepper .
1 1/2 tsps black cardamom pods, ground .
3/4 tsp ground nutmeg
Directions
Step #1 Rinse pork cubes well & place directly in bowl.
Step #2 Do not pat meat dry.
Step #3 Add & mix all other above ingredients well together with pork, cover & keep in fridge overnight.
Step #4 Turn all the meat & remaining liquid into cooking pot on high heat.
Step #5 As soon as it comes to a boil lower heat, cover with fitting lid & let simmer on slow fire for 1 hr in its own juices.
Step #6 Stir every 15 mins to make sure bottom is not burning.
Step #7 At the end of 45 mins, taste to ensure meat is tender.
Step #8 As soon as it is cooked turn off the stove & let vindaloo cool in pot.
Step #9 Keep overnight, heat & serve the next day with white rice & sliced onions sprinkled with salt.
Step #10 8 whistles on high heat if you are cooking in a pressure cooker, turn off stove & let cool in closed cooker.
