Pahkindieivat (finnish Nut Log) Recipe

Ingredients
  • 1 egg .
  • 1/4 c finely sliced almonds .
  • 2 tbsps sugar .
  • 1 prepared finnish butter cookie dough (Pikkuleipienperustaikina Pikkuleipienperustaikina (Finnish Butter Cookie Dough) is reccommended)

Directions
  • Step #1 Preheat oven to 350F (175C).
  • Step #2 Lightly grease a large baking sheet; set aside.
  • Step #3 Divide cookie dough into fourths.
  • Step #4 Rolling each between your hands & a lightly floured surface, shape into ropes, 1/2 inch thick.
  • Step #5 Cut crosswise in 2-inch slices.
  • Step #6 In a small shallow dish, beat egg until well mixed & smooth.
  • Step #7 In another small bowl, mix almonds & sugar.
  • Step #8 Roll cookie slices or logs first in beaten egg, then in sugar mixture.
  • Step #9 Place 2 inches apart on prepared baking sheet.
  • Step #10 Bake 12 to 15 mins or until lightly browned.
  • Step #11 Cool on a rack.
  • Step #12 Note: A good sub for the sugar is vanilla sugar.
  • Step #13 You can find it in most gourmet or European markets.
  • Step #14 Or, you can make your own.
  • Step #15 Place a couple of vanilla beans with your sugar in a tightly sealed canister.
  • Step #16 The strength will depend on how long you leave it as well as the amount of sugar.
  • Step #17 It has a very delicate flavor.
