Macadamia Nut Brownie Recipe

Ingredients
  • 110 g plain flour .
  • 110 g chocolate .
  • 55 ml dark rum .
  • 110 g macadamia nuts, sliced .
  • 2 eggs .
  • 170 g caster sugar .
  • 110 g unsalted butter

Directions
  • Step #1 Preheat the oven to 18oC/350F/gas 4.
  • Step #2 Grease a 20cm (8in) shallow, square tin & line with a piece of greased greaseproof paper.
  • Step #3 Melt the butter & chocolate in a saucepan over a low heat.
  • Step #4 Remove & allow this to cool.
  • Step #5 Beat the eggs & sugar together until light & thick.
  • Step #6 Stir in cooled chocolate mixture & the rum.
  • Step #7 Sift the flour & add to the mixture with the nuts.
  • Step #8 Fold in carefully & thoroughly, using a large metal spoon.
  • Step #9 Pile into the prepared tin.
  • Step #10 Bake in the centre of the oven for 30 mins or until the centre is firm to the touch.
  • Step #11 Remove from the oven & allow this to cool completely in the tin, then turn out onto a wire rack to cool.
  • Step #12 Cut into small squares to serve.
