Ingredients
5 tbsps granulated sugar .
1 2/3 c all-purpose flour .
1/2 c butter, at about room temp .
1/2 c confectioners' sugar .
1 pinch salt .
30 blanched almonds .
2 tbsps red food coloring .
1/4 tsp vanilla extract .
2 large eggs
Directions
Step #1 Heat oven to 350°.
Step #2 Line two baking sheets with Silpats (French nonstick baking mats) or parchment paper, & set aside.
Step #3 Place food coloring in a shallow bowl.
Step #4 crack each whole almond into halves.
Step #5 & toss them into the bowl with the food coloring & stir them until the color is evenly distributed.
Step #6 leave them in the bowl & stir them every so often until the color is as dark as you like.
Step #7 Separate 1 egg.
Step #8 Set aside the white.
Step #9 In a small bowl, whisk together yolk, remaining egg, & vanilla.
Step #10 Set aside.
Step #11 In the bowl of an electric mixer fitted with the paddle attachment, mix butter, confectioners' sugar, granulated sugar, & salt.
Step #12 Beat on medium speed until well mixd.
Step #13 Add egg mixture, & beat until smooth, about 2 mins.
Step #14 Add the flour, & mix on lowish speed just until incorporated.
Step #15 Wrap the dough in plastic, & chill until firm, 20 to 30 mins.
Step #16 Divide the dough in half.
Step #17 Work with one piece at a time, keeping remaining dough covered with plastic wrap & chilled.
Step #18 Divide the first half into fifteen pieces.
Step #19 On a lightly floured surface, roll each piece back & forth with palms into finger shapes, 3 to 4 inches long.
Step #20 Pinch dough in two places to form knuckles.
Step #21 Score each knuckle lightly with the back of a small knife.
Step #22 Transfer fingers to prepared baking sheets.
Step #23 Repeat with remaining dough.
Step #24 When all fingers are formed, brush lightly with egg white.
Step #25 Position almond nails; push into dough to attach.
Step #26 Bake until lightly browned, about 12 mins.
Step #27 Cool completely.
Step #28 note: To make the knuckles more creepy just shape them big & uneven.
Step #29 To keep them from puffing out too much roll the fingers extra skinny (skinnier than you want them to look if that makes sense).
Step #30 I also try to get them out of the oven before they brown.
Step #31 I sometimes add a bit of almond extract to dough.
